CBTF COOKS: Recipe of the Month

AFRICAN STEW

Kate says, “This is one of my favorite winter recipes. The heat of hot sauce adds to the warmth of the stew.”

Serving: 6-8

Prep time:  20 minutes

Cook time: 30 minutes

Total time:  60 minutes

Ingredients

  • 6 cups vegetable broth
  • 1-2 sweet potatoes cut into bite sized pieces
  • 1 medium red onion chopped
  • 2 Tbsp peeled, minced fresh ginger
  • 4 cloves minced garlic
  • 1 tsp salt
  • ¾ cups peanut butter
  • ½ cup tomato paste
  • 1 bunch greens (collard, spinach, kale not curly leaf) 
  • 2 15 oz cans chickpeas
  • Sriracha or other hot sauce
  • ¼ cup chopped peanuts

Directions

  1. Bring broth to a boil 
  2. Add sweet potatoes, onion, ginger, garlic, and salt 
  3. Cook on medium heat for ~20 minutes
  4. In a medium sized mixing bowl combine the peanut butter and tomato paste
  5. Add 1-2 cups of the hot broth to the mixture
  6. Whisk together until smooth
  7. Pour this mixture into the pot and mix well
  8. Stir in greens and chickpeas 
  9. Simmer 15 mins on med/low heat stirring often
  10. Serve over rice topped with chopped peanuts and hot sauce to taste

Tips: If you like a creamy consistency, boil/simmer the sweet potatoes longer, so they completely soften. 

Can also cut down on fat by reducing the amount of peanut butter by up to 1/3, but still get the peanut taste.
